Roasted Mini Potatoes

Ingredients:

  • mini potatoes
  • avocado oil or olive oil
  • garlic powder
  • paprika
  • fresh thyme or rosemary
  • salt and pepper

Directions:

  1. Preheat oven to 425F.
  2. Chop desired amount of potatoes in half and place on a baking sheet or glass baking dish.
  3. Drizzle avocado/olive oil over potatoes and season desired amount of salt, pepper, garlic powder, paprika, thyme (or rosemary). Ensure the potatoes are covered well in the oil and spices.
  4. Roast for 30-45 minutes depending on the size of potatoes. Stir after 20 minutes.
