- mini potatoes
- avocado oil or olive oil
- garlic powder
- fresh thyme or rosemary
- salt and pepper
- Preheat oven to 425F.
- Chop desired amount of potatoes in half and place on a baking sheet or glass baking dish.
- Drizzle avocado/olive oil over potatoes and season desired amount of salt, pepper, garlic powder, paprika, thyme (or rosemary). Ensure the potatoes are covered well in the oil and spices.
- Roast for 30-45 minutes depending on the size of potatoes. Stir after 20 minutes.
