Pumpkin Muffins


  • 3/4 cup almond flour
  • 2 scoops vanilla protein powder
  • 1/2 tbsp pumpkin pie spice
  • 1/2 tsp baking powder
  • 3 eggs
  • 1 cup canned pumpkin
  • 1/2 tbsp vanilla extract
  • 2 tbsp honey
  • 1/4 tsp cinnamon
  • 1/2 cup unsweetened Apple Sauce


  1. Preheat oven to 350F.
  2. Grease a muffin tin or insert muffin liners.
  3. Mix all dry ingredients together in a large bowl.
  4. Gradually stir in eggs, canned pumpkin, vanilla extract, apple sauce and agave.
  5. Spoon the batter into the muffin tray, filling each one 3/4 full.
  6. Bake 20 minutes or until fully baked.
  7. Store in the fridge.
