Ingredients:
- 1lb pork tenderloin
- 1 tsp sea salt
- 1/2 tsp ground pepper
- 1.5 cups peeled and diced mango (fresh or frozen)
- 1 tsp orange rind
- 3 tbsp green onions
- 2 tbsp fresh grated ginger
- 3 tbsp orange juice (freshly squeezed if possible)
- 1/2 tsp coriander
- 1/4 tsp cardamom
- 1 tbsp olive oil or avocado oil
Directions:
- Mix mango, orange rind and juice, onions, ginger and spices together in a bowl and set aside.
- Cut tenderloin crosswise into 8 pieces (approx 1 inch each). Place plastic wrap over each piece of pork and pound to even thickness with a meat mallet or fry pan.
- Sprinkle each flattened piece of pork with salt and pepper.
- Heat oil in a pan on medium-high heat. Add half the pork and cook for 3-5 minutes a side (or until done, juices run clear).
- Remove from pan and repeat with the remainder of the pork
- Serve pork and top with mango salsa.
