Pork Tenderloin with Fresh Mango Salsa


  • 1lb pork tenderloin
  • 1 tsp sea salt
  • 1/2 tsp ground pepper
  • 1.5 cups peeled and diced mango (fresh or frozen)
  • 1 tsp orange rind
  • 3 tbsp green onions
  • 2 tbsp fresh grated ginger
  • 3 tbsp orange juice (freshly squeezed if possible)
  • 1/2 tsp coriander
  • 1/4 tsp cardamom
  • 1 tbsp olive oil or avocado oil


  1. Mix mango, orange rind and juice, onions, ginger and spices together in a bowl and set aside.
  2. Cut tenderloin crosswise into 8 pieces (approx 1 inch each). Place plastic wrap over each piece of pork and pound to even thickness with a meat mallet or fry pan.
  3. Sprinkle each flattened piece of pork with salt and pepper.
  4. Heat oil in a pan on medium-high heat. Add half the pork and cook for 3-5 minutes a side (or until done, juices run clear).
  5. Remove from pan and repeat with the remainder of the pork
  6. Serve pork and top with mango salsa.
