Roasted Radishes

Ingredients:

  • 2lbs radishes
  • 1-2 Tbsp avocado oil or olive oil
  • 1 tsp garlic powder
  • pinch salt and pepper
  • 1-2 Tbsp fresh thyme
  • lemon zest

Directions:

  1. Preheat oven to 425F.
  2. Remove the tops from the radishes and slice them in half.
  3. Toss in a bowl with remaining ingredients.
  4. Roast in the oven for about 20 minutes, stirring halfway. They are ready when they are fork tender.
  5. Enjoy!
