Ingredients:
- 2-4 chicken breasts
- 25g goat cheese
- 1-2 cups of spinach
- 1-2 tbsp avocado or olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1-2 handfuls of mushrooms, sliced
- 1 tsp paprika
- salt & pepper
Directions:
- Preheat oven to 425F.
- Using a meat mallet (or back side of a pan/pot), flatten chicken breasts.
- Lightly coat chicken breasts in oil and season with salt, pepper and paprika. Feel free to use any desired mixture of spices for this part.
- In a frying pan on medium heat, add a bit of oil and saute onions and garlic. When onions are translucent add spinach and mushroom. Season with salt and pepper and saute until cooked.
- Once cooled (about 5 mins), transfer ingredients into a bowl and mix in goat cheese.
- Split filling into 2-4 depending on the number of chicken breasts you have.
- Fill each chicken breast with 2-3 Tbsp of the filling and fold the breast together. Use butchers twine or tooth picks to keep it together.
- Bake in the oven for 20-30 minutes (until internal temperature of chicken is 125F).
- Remove from oven and enjoy! We love pairing this with sauteed asparagus and roasted sweet potatoes!
