Spinach & Goat Cheese Stuffed Chicken


  • 2-4 chicken breasts
  • 25g goat cheese
  • 1-2 cups of spinach
  • 1-2 tbsp avocado or olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1-2 handfuls of mushrooms, sliced
  • 1 tsp paprika
  • salt & pepper


  1. Preheat oven to 425F.
  2. Using a meat mallet (or back side of a pan/pot), flatten chicken breasts.
  3. Lightly coat chicken breasts in oil and season with salt, pepper and paprika. Feel free to use any desired mixture of spices for this part.
  4. In a frying pan on medium heat, add a bit of oil and saute onions and garlic. When onions are translucent add spinach and mushroom. Season with salt and pepper and saute until cooked.
  5. Once cooled (about 5 mins), transfer ingredients into a bowl and mix in goat cheese.
  6. Split filling into 2-4 depending on the number of chicken breasts you have.
  7. Fill each chicken breast with 2-3 Tbsp of the filling and fold the breast together. Use butchers twine or tooth picks to keep it together.
  8. Bake in the oven for 20-30 minutes (until internal temperature of chicken is 125F).
  9. Remove from oven and enjoy! We love pairing this with sauteed asparagus and roasted sweet potatoes!
