Mexican Chickpea Salad


  • 1 can of chickpeas, drained and rinsed
  • 1 lime, juiced
  • 1/2 -1 red onion (depending how much you like)
  • 1 large tomato, diced
  • 1 coloured bell pepper, diced
  • 1 TBSP olive oil
  • ¼ cup fresh cilantro
  • Dash of salt and pepper
  • ¼-½ tsp chili powder
  • ¼-½ tsp cumin
  • cayenne pepper (optional)
  • ½-1 jalapeno, seeded and diced (optional)


  1. Mix everything together in a bowl and store in fridge.
  2. Enjoy chilled.
