- 1 can of chickpeas, drained and rinsed
- 1 lime, juiced
- 1/2 -1 red onion (depending how much you like)
- 1 large tomato, diced
- 1 coloured bell pepper, diced
- 1 TBSP olive oil
- ¼ cup fresh cilantro
- Dash of salt and pepper
- ¼-½ tsp chili powder
- ¼-½ tsp cumin
- cayenne pepper (optional)
- ½-1 jalapeno, seeded and diced (optional)
- Mix everything together in a bowl and store in fridge.
- Enjoy chilled.
