Red Cabbage Stew


  • 4 Carrots
  • 1 spanish onion, diced
  • 3 cloves of garlic, minced
  • 1” ginger, peeled and minced
  • 1 small head of red cabbage, diced
  • 1 can diced tomatoes
  • 1 cup cooked lentils
  • 1 TBSP coconut oil
  • 2 tsp Italian seasoning
  • 1 tsp paprika
  • 2 tsp cumin
  • dash of salt and pepper


  1. In a pot sautee onions and garlic in coconut oil, until translucent.
  2. Add carrots and ginger, cook for additional 5-10 minutes
  3. Add chopped up cabbage, salt and pepper and cook covered for 10 minutes.
  4. Add diced tomatoes, italian seasoning, paprika, cumin and simmer with a lid for 10 minutes.
  5. Mix in cooked lentils (according to package).

*Optional to add veggie broth to make a bit more like a soup
