Garlic Roasted Chickpeas

Ingredients:

  • 1 can chickpeas (drained and rinsed) OR 1.5 cups cooked chickpeas
  • 1 tsp extra-virgin olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp fine sea salt
  • 1/4 tsp cayenne pepper (optional)

Directions:

  1. Preheat oven to 400F. Line a baking sheet with parchment paper.
  2. Place chickpeas in a dishcloth and rub dry. Spread the chickpeas out on the baking sheet.
  3. Drizzle with oil and roll the chickpeas around with your hands to coat.
  4. Sprinkle on the garlic powder, salt and cayenne (if desired) and gently shake the pan until combined.
  5. Roast for 15 minutes, then gently roll the chickpeas around on the baking sheet and roast for an additional 15-20 minutes, until lightly golden.
  6. Remove from the oven and let cool for about 10 minutes.
  7. Enjoy! These are best eaten the same day but are best stored out in a bowl at room temperature. (Sealed containers and the fridge will may them soggy).
