Carrot-Lentil Soup {vegan}


  • 2-3″ Fresh Ginger (grated)
  • 1″ Fresh Turmeric
  • 3-4 Garlic cloves
  • 1 Onion
  • 10 Carrots
  • 1 cup red Lentils
  • 1-2 tbsp avocado or olive oil
  • 2 cartons (8cups) Vegetable or Chicken broth
  • 1 can coconut milk
  • Spices (of your choice)


  1. Sautee Ginger, Tumeric, Garlic & Onion for 5 mins
  2. Add diced carrots and cook 5 mins (with lid on)
  3. Add 1 carton of broth and bring to a boil
  4. Add 1 cup of lentils and cook on high for 10mins
  5. Add 2nd carton of broth and cook on medium until carrots are soft (approx 15mins)
  6. Add desired spices & 1/2-1 can coconut milk (You can save 1/2 can to drizzle over your bowl or you can add the full can right away)
  7. Blend everything in high speed blender, or with an immersion blender
  8. Enjoy with toppings of your choice, we topped with curry powder, pepper & coconut milk, but get creative!
