Makes 10 servings.
Ingredients:
- 2lbs ground beef or turkey
- 1 red onion
- 1 tsp minced garlic
- 1 29 oz can tomato sauce
- 2 cups diced tomatoes with juice
- 3 cups of stock
- 1 cup sliced carrots
- 5 cups sweet potatoes peeled and cubed
- 2 bay leaves
- ½ tsp thyme
- 1 tsp black pepper
- ½ cup chilli powder
- Dash of oregano
- Dash of red pepper flakes
Directions:
- In a large saucepan, brown ground meat, onions and garlic. Drain excess fat.
- Add remaining ingredients. Mix well. Bring to a boil. Simmer on low heat for about 40 min or until potatoes and carrots are cooked through.
- Remove bay leaves and serve!
