Egg Roll in a Bowl


  • 1 head of cabbage (chopped)
  • 4 carrots (shredded)
  • 1 lb of ground turkey or beef
  • 1/2 cup coconut aminos or low sodium soy sauce


  1. Brown turkey or beef in a pan on medium heat.
  2. Once browned, reduce heat and add shredded carrots and cabbage and continue to cook for until veggies are tender.
  3. Add coconut aminos, stir and cook for an additional 1-2 minutes.
  4. Remove from heat and divide into 2-3 portions and enjoy!

Alternatives: If pressed for time you can buy a bag of pre-shredded coleslaw mix to substitute for the head of cabbage and 4 carrots. You can also omit the ground meat in this recipe and use it as a side dish of vegetables.
